My life as being a kid had embedded some deep core wounds which i had spent the most of my life at that point diving deeply into on the side of my hospitality career. And a chef’s job is not the most logical environment for healing.
I simply wanted to be free of the suffering. Hospitality was a vehicle for me to earn money, read about the world & travel. On the side I might travel through the North of Australia in the wintertime season, towards the southern parts for your summers working on farms in the middle. It was a never-ending summer of finding people to learn different healing modalities & bodywork from, all the while employed in idyllic locations like the wilderness of Tasmania in eco lodges, the deserts of Australia.
I set my 1975 4WD Land Rover Series 3 up with solar panels, 3 batteries, and kitchen inside my trailer, and i also would go and do vision quests in the desert for 40 – two months asking questions in deep contemplative states to locate answers about life no-one had been in a position to help me to with. I traveled All that mighty land called Australia over 20 years employed in the best restaurants within australia and the world.
I even worked in a fine dining restaurant inside the desert which was booked 2 weeks beforehand & was the Sommelier selling wines as much as Au$4400 per bottle! I mean, what a ride. Some of the people who own these places inspired me incredibly and that i cannot thank them enough. One chef, Stefano de Pieri wasn’t a qualified chef and had his own T.V channel and among the best restaurant in the world. Mind blown I was thinking damn, you simply need passion in life and motivation.

The better I learnt about production of our foods, the greater I realized how messed up things were. I took focus on a chicken-processing farm for 6 weeks to truly see exactly what is happening. What did I learn? We are really disconnected from what is really happening. So when we see cuts of meat all cleaned and bleached at the supermarkets or sent to our establishments, whatever we are missing and never connecting to is all the suffering that comes with it. And I don’t just mean the animals, for sure that’s obvious. But the people who operate in these places have severe mental illness. They may be people who do not fit into society, cannot hold a conversation with “normal” folk. Cannot show up to operate all dressed sharp while keeping it together. Nope, these individuals require our help.
